Applesauce Muffins

Ingredients

For the Muffins

  • 1/2 cup butter softened
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1 cup applesauce sweetened if you like a little sweeter muffin
  • 1 3/4 cup flour
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

For the Topping

  • 1/4 cup butter melted
  • 1/3 cup sugar
  • 1/4 tsp cinnamon

Instructions

  • Preheat your oven to 350°F and line a muffin tin with paper liners or grease it well.
  • In a large bowl, cream together ½ cup of softened butter and ½ cup of sugar until the mixture is light and fluffy.
  • Beat in 2 eggs, one at a time, then stir in ½ teaspoon of vanilla extract until combined.
  • Add 1 cup of applesauce to the wet ingredients and stir until everything is well incorporated.
  • In a separate bowl, whisk together 1 ¾ cups of flour, 2 teaspoons of baking powder, ½ tablespoon of cinnamon, and ½ teaspoon of salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix, or your muffins might turn out dense.
  • Scoop the batter into your prepared muffin tin, filling each cup about ¾ full. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • While the muffins are baking, melt ¼ cup of butter. In a small bowl, mix together ⅓ cup of sugar and ¼ teaspoon of cinnamon.
  • Once the muffins are done baking, let them cool slightly. Then, dip the tops of each muffin into the melted butter and immediately into the cinnamon-sugar mixture.
