Instructions
Preheat your oven to 350°F and line a muffin tin with paper liners or grease it well.
In a large bowl, cream together ½ cup of softened butter and ½ cup of sugar until the mixture is light and fluffy.
Beat in 2 eggs, one at a time, then stir in ½ teaspoon of vanilla extract until combined.
Add 1 cup of applesauce to the wet ingredients and stir until everything is well incorporated.
In a separate bowl, whisk together 1 ¾ cups of flour, 2 teaspoons of baking powder, ½ tablespoon of cinnamon, and ½ teaspoon of salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix, or your muffins might turn out dense.
Scoop the batter into your prepared muffin tin, filling each cup about ¾ full. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
While the muffins are baking, melt ¼ cup of butter. In a small bowl, mix together ⅓ cup of sugar and ¼ teaspoon of cinnamon.
Once the muffins are done baking, let them cool slightly. Then, dip the tops of each muffin into the melted butter and immediately into the cinnamon-sugar mixture.
