Ingredients

  • 1 1/2 Cup All-purpose Flour
  • 1/2 Cup Brown Sugar
  • 1 tsp Cinnamon
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • Pinch Salt
  • 3 Ripe Bananas Mashed
  • 3/4 Cup Plain Greek Yogurt
  • 2 Large Eggs
  • 1/2 Tbsp Vanilla Extract
  • 1/2 Cup Walnuts Chopped

Instructions

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
  • In a large bowl, whisk together flour, brown sugar, cinnamon, baking soda, baking powder, and salt.
  • In a separate bowl, mix mashed bananas, Greek yogurt, eggs, and vanilla extract until smooth.
  • Combine the wet and dry ingredients, stirring gently until just combined. Fold in walnuts.
  • Divide the batter evenly into the muffin tin, filling each cup about ¾ full.
  • Bake for 15 minutes, or until a toothpick comes out clean. Cool on a wire rack and enjoy!
