Ingredients

For the Cupcakes

  • 3 cups flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1 Tbsp cinnamon
  • 1 cup butter softened
  • 1 3/4 cups sugar
  • 4 eggs
  • 2 tsp vanilla extract
  • 1 1/4 cups milk

For the Crunch Topping

  • 4 Tbsp butter melted
  • 1/4 cup sugar
  • 1 tsp cinnamon

For the Cinnamon Cream Cheese Icing

  • 1/2 cup butter softened
  • 8 oz cream cheese softened
  • 1/2 tsp vanilla extract
  • 1 tsp cinnamon
  • 5 cups powdered sugar
  • 1 Tbsp milk

Instructions

Cupcakes

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.
  • In a large bowl, using an electric mixer, beat the butter and sugar together until light and fluffy, about 2-3 minutes. The key here is to make sure the butter is softened and whipped well to get that fluffy texture.
  • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the flour mixture until everything is combined. Don’t overmix!
  • Spoon the batter into the cupcake liners, filling each about ⅔ of the way full. This ensures that your cupcakes rise perfectly without overflowing.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove the cupcakes from the oven and allow them to cool completely on a wire rack.

Crunch Topping

  • While the cupcakes are cooling, melt 4 tablespoons of butter.
  • In a small bowl, combine ¼ cup sugar and 1 teaspoon cinnamon to make your cinnamon sugar topping.
  • Once the cupcakes have cooled, brush the tops of each cupcake with the melted butter, then dip the tops into the cinnamon sugar mixture, coating them well.

Cinnamon Cream Cheese Icing

  • In a large bowl, beat together the butter and cream cheese until smooth and creamy. Make sure both are softened for the best texture.
  • Mix in the vanilla extract and cinnamon until well combined.
  • Gradually add the powdered sugar, one cup at a time, beating well after each addition. The frosting will be thick but should become fluffy as you continue to beat it.
  • If the frosting is too thick, add 1 tablespoon of milk to reach your desired consistency. You want the frosting to be thick enough to hold its shape but smooth enough to pipe or spread easily.
