For the Cake 2 cups all-purpose flour 2 cups sugar 2 tsp baking powder 1 1/2 tsp cinnamon 1/2 tsp salt 1/2 tsp baking soda 3 cups shredded carrots 4 eggs 3/4 cups vegetable oil 1 tsp vanilla extract For the Icing 4 cups Powdered Sugar 2 tsp vanilla extract 1/2 cup butter softened 8 oz cream cheese softened
Preheat oven to 350°F and grease two 9-inch cake pans.
Whisk together dry ingredients, then mix in wet ingredients and carrots.
Bake for 30-35 minutes and cool completely.
Make cream cheese icing by beating together butter, cream cheese, powdered sugar, and vanilla.
