Ingredients

  • 2 Tbsp oil olive or vegetable
  • 2 1/2 - 3 lbs chicken pieces bone-in or boneless
  • 22 oz condensed mushroom soup
  • 1/2 cup white wine
  • 2 Tbsp fresh parsley chopped
  • 1/2 tsp thyme
  • 1/4 tsp rosemary
  • 1/2 lb baby carrots
  • 1 yellow onion sliced

Instructions

  • Heat oil in a large skillet over medium-high heat. Brown the chicken pieces for 10 minutes, then remove and set aside.
  • Combine mushroom soup and white wine in the skillet, scraping the brown bits. Add parsley, thyme, and rosemary, stirring until smooth. Bring to a boil, then reduce heat and simmer for a few minutes.
  • Return chicken to the skillet, bring to a boil, reduce heat, cover, and cook for 15 minutes.
  • Add baby carrots and sliced onion, stir to combine, cover, and simmer for 20 minutes or until the vegetables are tender and the chicken is cooked through.
  • Serve chicken with sauce, carrots, and onions.
