2Tbspoilolive or vegetable
2 1/2 - 3lbschicken piecesbone-in or boneless
22ozcondensed mushroom soup
1/2cupwhite wine
2Tbspfresh parsleychopped
1/2tsp thyme
1/4tsprosemary
1/2lbbaby carrots
1yellow onionsliced
Instructions
Heat oil in a large skillet over medium-high heat. Brown the chicken pieces for 10 minutes, then remove and set aside.
Combine mushroom soup and white wine in the skillet, scraping the brown bits. Add parsley, thyme, and rosemary, stirring until smooth. Bring to a boil, then reduce heat and simmer for a few minutes.
Return chicken to the skillet, bring to a boil, reduce heat, cover, and cook for 15 minutes.
Add baby carrots and sliced onion, stir to combine, cover, and simmer for 20 minutes or until the vegetables are tender and the chicken is cooked through.
