Ingredients

For Sweet and Sour Sauce

  • 1 Cup Pineapple Juice
  • 3/4 Cup Brown Sugar
  • 1/3 Cup Rice Vinegar
  • 3 Tbsp Ketchup
  • 2 Tbsp Soy Sauce
  • Slurry As need for thickening

Slurry

  • 2 Tbsp Cold water
  • 2 Tbsp Corn Starch

For the Chicken

  • 1 lb Chicken Breast Cubed
  • 1/4 Cup Cornstarch
  • 1/4 Cup Flour
  • 3 Tbsp Oil For frying

Optional Add-ins

  • Bell Peppers Any color
  • Onions Diced
  • Pineapple Chunks

Instructions

  • Cube the chicken and coat it in a mixture of cornstarch and flour. Fry in oil until golden brown and cooked through. Set aside.
  • In a saucepan, combine pineapple juice, brown sugar, rice vinegar, ketchup, and soy sauce. Simmer for 5-7 minutes. If needed, thicken the sauce with a cornstarch slurry.
  • Stir in bell peppers, onions, or pineapple chunks if using. Let cook for 2-3 minutes if using these optional add-ins.
  • Add the fried chicken to the sauce, stirring to coat. Let it simmer for a few minutes.
  • Serve the sweet and sour chicken over rice, garnished with green onions or sesame seeds.
